Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups buttermilk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- 1/2 cup graham cracker crumbs
- Chocolate ganache, for topping
- Marshmallow fluff, for topping
- Graham cracker crumbs, for garnish
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are fine.
- Heat a lightly greased griddle or non-stick skillet over medium heat. Pour 1/4 cup of batter onto the griddle for each pancake.
- Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes, or until golden brown.
- Remove the pancakes from the griddle and sprinkle each pancake with mini marshmallows and graham cracker crumbs.
- Place the pancakes under a broiler for a few seconds, until the marshmallows start to melt and brown slightly.
- Remove from the broiler and stack the pancakes on a serving plate.
- Drizzle with chocolate ganache and marshmallow fluff.
- Garnish with additional graham cracker crumbs.
- Serve the S’mores Buttermilk Pancakes immediately and enjoy!
Note: Be careful when placing the pancakes under the broiler, as the marshmallows can quickly burn. Keep a close eye on them.
