Ingredients
- 500g fresh tuna loin
- 4 tablespoons black garlic paste
- 2 tablespoons vegetable oil
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon mirin
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 2 teaspoons grated ginger
- 2 tablespoons pickled ginger, for serving
- Fresh cilantro, for garnish
- Sesame seeds, for garnish
Instructions
- Prepare the Ponzu Sauce:
- In a small bowl, whisk together soy sauce, rice vinegar, mirin, lemon juice, honey, and grated ginger. Set aside.
- Prepare the Tuna Tataki:
- Pat dry the tuna loin with paper towels. Brush the black garlic paste evenly onto all sides of the tuna.
- Heat vegetable oil in a skillet over high heat. Sear the tuna for about 30 seconds on each side, or until the outside is browned and the inside is still rare.
- Remove the tuna from the skillet and let it rest for a few minutes. Slice the tuna into thin slices.
- Serve:
- Arrange the tuna slices on a serving platter. Drizzle the ponzu sauce over the tuna.
