Ingredients:
- 8 ounces smoked salmon, sliced
- 1 bunch asparagus, ends trimmed
- 4 cups mixed salad greens
- 1/4 cup red onion, thinly sliced
- 1/4 cup capers
- 1/4 cup fresh dill, chopped
- 1/4 cup Greek yogurt
- 2 tablespoons lemon juice
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1 cup everything bagel croutons
Instructions:
- Preheat your grill or grill pan over medium heat.
- In a small bowl, whisk together the Greek yogurt, lemon juice, olive oil, Dijon mustard, and chopped dill. Season with salt and pepper to taste. Set aside.
- Place the asparagus spears on the grill and cook for 5-7 minutes, turning occasionally, until tender and lightly charred. Remove from the grill and let cool slightly.
- In a large salad bowl, combine the mixed salad greens, sliced red onion, capers, and smoked salmon.
- Cut the grilled asparagus into bite-sized pieces and add them to the salad bowl.
- Drizzle the lemon dill yogurt dressing over the salad and toss gently to coat.
- Top the salad with everything bagel croutons.
- Serve the Smoked Salmon and Asparagus Salad immediately and enjoy!
Note: You can customize the salad by adding additional toppings such as cherry tomatoes, avocado, or hard-boiled eggs.
