These Gingerbread Buttermilk Pancakes are a delicious and festive breakfast treat. They are made with warm spices like cinnamon, ginger, and nutmeg, and topped with a spiced molasses syrup for the perfect holiday flavor combination.
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 3/4 cups buttermilk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 2 tablespoons molasses
- Spiced Molasses Syrup, for serving
- Optional toppings: whipped cream, powdered sugar, ground cinnamon
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, ginger, nutmeg, and salt.
- In a separate bowl, whisk together the buttermilk, melted butter, eggs, and molasses.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are fine.
- Preheat a griddle or non-stick skillet over medium heat. Grease with cooking spray or melted butter.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
- Remove the pancakes from the griddle and serve immediately with Spiced Molasses Syrup.
- Optional: Top with whipped cream, powdered sugar, and a sprinkle of ground cinnamon for extra flavor.
