Ingredients:
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1/4 cup extra-virgin olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried basil
- Salt and black pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup sun-dried tomatoes, drained and chopped
- 1/4 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
Instructions:
- Rinse the quinoa thoroughly under cold water to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the liquid is absorbed. Remove from heat and let it cool.
