Description

Ingredients
For the Paella:
- 1 kg rabbit, cut into pieces
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 tomato, grated
- 1 teaspoon paprika
- A pinch of saffron threads
- 2 cups paella rice
- 1.5 liters chicken broth
- Salt to taste
- Fresh rosemary sprigs, for garnish
Instructions
For the Paella:
- In a large paella pan, heat the olive oil over medium heat. Add the rabbit pieces and brown on all sides. Remove and set aside.
- In the same pan, add the chopped onion, garlic, and bell pepper. Sauté until the onion is translucent.
- Add the grated tomato, paprika, and saffron to the pan. Stir well to combine.
- Add the paella rice to the pan and stir to coat the rice in the mixture.
- Return the rabbit pieces to the pan and add the chicken broth. Bring to a boil, then reduce the heat to low and simmer for about 30 minutes, or until the rice is cooked and has absorbed most of the liquid.
- Season with salt to taste and garnish with fresh rosemary sprigs.
