Ingredients:
- 1 pound pork ribs or pork belly, cut into serving pieces
- 1 onion, sliced
- 2 tomatoes, quartered
- 1 radish, peeled and sliced
- 1 eggplant, sliced
- 1 bunch kangkong (water spinach) or spinach, trimmed
- 2 tablespoons sinigang sa sampalok mix (tamarind soup base)
- 2 cups water
- 1 cup ube (purple yam) puree
- Salt, to taste
- Patis (fish sauce), to taste
- Fresh cilantro, for garnish
Instructions:
- In a large pot, bring the water to a boil.
- Add the pork ribs or pork belly and simmer for a few minutes until cooked halfway.
- Add the onions, tomatoes, radish, and eggplant to the pot.
- Stir in the sinigang sa sampalok mix and simmer for about 10 minutes.
- Add the kangkong or spinach and simmer for another 5 minutes.
- Stir in the ube (purple yam) puree and continue simmering for 5 minutes.
- Season with salt and patis (fish sauce) to taste.
- Remove from heat and garnish with fresh cilantro.
