- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 2 medium carrots, diced
- 1 zucchini, diced
- 1 jalapeño pepper, seeded and minced (optional, adjust to taste)
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 2 tablespoons tomato paste
- 2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- Salt and black pepper to taste
- Optional toppings: chopped fresh cilantro, sour cream, shredded cheese, sliced jalapeños, diced avocado
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium heat.
