Ingredients:
- 1 cup cooked quinoa
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup almond milk yogurt
- 2 tablespoons honey
- 1/4 cup pistachios, chopped
Instructions:
- In a bowl, combine the cooked quinoa and mixed berries.
- In a separate bowl, mix the almond milk yogurt and honey until well combined.
- Pour the yogurt mixture over the quinoa and berries, and toss gently to coat.
- In a small pan, toast the chopped pistachios over medium heat until fragrant.
- Sprinkle the toasted pistachios over the quinoa and berries.
- Serve the Berry Quinoa Breakfast Salad chilled and enjoy!
