Smoky Grilled Chicken Caesar Salad

Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 2 romaine lettuce hearts
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- Croutons, for serving
Caesar Dressing:
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions:
- Preheat the grill to medium-high heat.
- Rub the chicken breasts with olive oil and sprinkle with smoked paprika, salt, and pepper.
- Grill the chicken for about 5-6 minutes per side, or until cooked through. Remove from the grill and let it rest for a few minutes before slicing.
- While the chicken is resting, cut the romaine lettuce hearts in half lengthwise. Brush them with olive oil and season with salt and pepper.
- Place the romaine hearts on the grill, cut side down. Grill for 2-3 minutes, or until lightly charred.
- In a small bowl, whisk together the ingredients for the Caesar dressing until well combined.
- To assemble the salad, place the grilled romaine hearts on a platter. Top with sliced grilled chicken, cherry tomatoes, Parmesan cheese, and croutons.
- Drizzle the Caesar dressing over the salad.
