Ingredients:
- 1 cup heavy cream
- 200g white chocolate, chopped
- 1 tablespoon matcha green tea powder
- 2 tablespoons powdered sugar
- Raspberry Coulis:
- 1 cup fresh raspberries
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- Almond Tuile:
- 1/2 cup sliced almonds
- 1/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 2 tablespoons unsalted butter, melted
Instructions:
- In a heatproof bowl, melt the white chocolate over a double boiler or in the microwave, stirring until smooth. Set aside to cool slightly.
- In a separate bowl, whip the heavy cream until soft peaks form. Add the matcha green tea powder and powdered sugar, and continue to whip until stiff peaks form.
- Gently fold the melted white chocolate into the whipped cream mixture until well combined.
- Divide the mousse into serving glasses or bowls. Chill in the refrigerator for at least 2 hours to set.
- In the meantime, prepare the raspberry coulis by blending the fresh raspberries, granulated sugar, and lemon juice in a blender until smooth. Strain the mixture to remove any seeds.
- For the almond tuile, preheat your oven to 350°F (175°C). In a bowl, combine the sliced almonds, granulated sugar, all-purpose flour, and melted butter. Mix until well combined.
- Line a baking sheet with parchment paper. Drop teaspoonfuls of the almond tuile batter onto the prepared baking sheet, spacing them apart. Use the back of a spoon to spread the batter into thin, circular shapes.
- Bake in the preheated oven for about 8-10 minutes, or until the tuiles are golden brown and crispy. Remove from the oven and let them cool on a wire rack.
- Once the mousse is set, remove it from the refrigerator. Top each serving with a drizzle of raspberry coulis and garnish with almond tuiles.
