For the Spring Rolls:
- 8-10 rice paper wrappers
- 8-10 large lettuce leaves
- 1 cup cooked vermicelli noodles
- 1 cup julienned carrots
- 1 cup julienned cucumber
- 1 cup bean sprouts
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh basil leaves
For the Peanut Dipping Sauce:
- 1/4 cup creamy peanut butter
- 2 tablespoons hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon sriracha sauce (adjust to taste)
- 2-4 tablespoons water (to adjust consistency)
Instructions:
- Prepare all the ingredients and have them ready for assembly.
- Fill a large shallow dish or a pie plate with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it softens. Place it on a clean, damp kitchen towel or a plate.
- On the bottom third of the softened rice paper wrapper, place a lettuce leaf. Top it with a small handful of cooked vermicelli noodles, julienned carrots, julienned cucumber, bean sprouts, fresh mint leaves, cilantro leaves, and basil leaves.
- Fold the sides of the rice paper over the filling, then roll tightly from the bottom, tucking in the sides as you go, to form a neat roll. Repeat with the remaining ingredients.
- For the Peanut Dipping Sauce, in a small bowl, whisk together the peanut butter, hoisin sauce, soy sauce, lime juice, honey (or maple syrup), and sriracha sauce until smooth. Add water gradually, 1 tablespoon at a time, to achieve your desired dipping sauce consistency.
- Serve the Vietnamese Fresh Spring Rolls with the Peanut Dipping Sauce on the side.
