Ingredients:
- 4 pav buns
- Butter, for slathering
- 2 tablespoons oil
- 2 tablespoons butter
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 1 green chili, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt, to taste
- 2 medium tomatoes, finely chopped
- 1 cup mixed vegetables (such as peas, carrots, cauliflower, beans), boiled and mashed
- Fresh coriander leaves, for garnish
- Lemon wedges, for serving
Instructions:
- Slit the pav buns horizontally, but not all the way through.
- Slather butter on the inside of the pav buns.
- Heat oil and butter in a pan over medium heat.
- Add cumin seeds and allow them to crackle.
- Add finely chopped onion and green chili. Saute until the onion turns translucent.
- Add ginger-garlic paste and saute for a minute.
- Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
- Add finely chopped tomatoes and cook until they turn soft and mushy.
- Add the boiled and mashed mixed vegetables. Mix everything well and cook for 5-7 minutes.
- Garnish with fresh coriander leaves.
- Serve the butter pav bhaji hot with lemon wedges.
