Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1/2 cup fresh cherries, pitted and chopped
For the Cherry Sauce:
- 1 cup fresh cherries, pitted
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
For the Graham Cracker Crumble:
- 1/4 cup graham cracker crumbs
- 2 tablespoons unsalted butter, melted
- 1 tablespoon granulated sugar
Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped cherries.
- Heat a non-stick skillet or griddle over medium heat. Grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.
- Transfer the cooked pancakes to a plate and cover to keep warm.
- To make the cherry sauce, combine the cherries, sugar, lemon juice, and cornstarch in a small saucepan. Cook over medium heat, stirring occasionally, until the cherries break down and the sauce thickens. Remove from heat and let cool slightly.
- In a small bowl, mix together the graham cracker crumbs, melted butter, and sugar to make the crumble.
- Serve the pancakes topped with the cherry sauce and sprinkled with the graham cracker crumble.
Note: You can serve the pancakes with whipped cream or cream cheese frosting for an extra touch of cheesecake flavor. Enjoy!
