Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Japanese whiskey
- Zest and juice of 1 lime
- Zest and juice of 1 orange
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
- 8 large lettuce leaves
For the Roasted Corn Salsa:
- 1 cup roasted corn kernels
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons chopped fresh cilantro
- Juice of 1 lime
- Salt and pepper, to taste
For the Lime Crema:
- 1/2 cup sour cream
- Zest and juice of 1 lime
- Salt and pepper, to taste
Instructions:
- In a bowl, combine the Japanese whiskey, lime zest and juice, orange zest and juice, minced garlic, grated ginger, soy sauce, honey, vegetable oil, salt, and pepper. Mix well to make the marinade.
- Place the shrimp in a zip-top bag and pour the marinade over them. Seal the bag and marinate in the refrigerator for 15-20 minutes.
- While the shrimp is marinating, prepare the roasted corn salsa. In a bowl, combine the roasted corn kernels, diced red bell pepper, diced red onion, minced jalapeno pepper, chopped cilantro, lime juice, salt, and pepper. Mix well and set aside.
- In another bowl, prepare the lime crema by combining the sour cream, lime zest and juice, salt, and pepper. Stir until well combined. Set aside.
- Preheat a grill or grill pan over medium-high heat. Remove the shrimp from the marinade, discarding the excess marinade. Grill the shrimp for 2-3 minutes per side, until they are cooked through and slightly charred. Remove from heat.
- To assemble the lettuce wraps, place a spoonful of the roasted corn salsa on each lettuce leaf. Top with a few grilled shrimp and drizzle with the lime crema.
- Serve the Japanese Whiskey Citrus Shrimp Lettuce Wraps immediately and enjoy!
