Corned Beef Hash and Eggs Breakfast Tacos

Start your day with a Tex-Mex twist on a classic breakfast favorite. These Corned Beef Hash and Eggs Breakfast Tacos are packed with flavor and make a hearty and satisfying morning meal. The combination of corned beef hash, scrambled eggs, and your favorite taco toppings wrapped in warm tortillas will leave you energized and ready to tackle the day.
Recipe
Ingredients:
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups corned beef hash
- 8 large eggs
- Salt and pepper, to taste
- 8 small flour tortillas
- Toppings (optional):
- Shredded cheese
- Chopped tomatoes
- Sliced avocado
- Salsa
- Sour cream
- Chopped cilantro
Instructions:
- Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent and fragrant.
- Add the corned beef hash to the skillet and cook, stirring occasionally, until heated through and slightly crispy.
- In a separate bowl, whisk the eggs together with salt and pepper.
- Push the corned beef hash to one side of the skillet and pour the whisked eggs into the other side. Scramble the eggs until cooked to your desired consistency.
- Warm the flour tortillas in a separate skillet or in the oven.
- Assemble the breakfast tacos by spooning a portion of the corned beef hash and scrambled eggs onto each tortilla.
- Add your preferred toppings, such as shredded cheese, chopped tomatoes, sliced avocado, salsa, sour cream, and chopped cilantro.
- Fold the tortillas in half to form tacos and serve immediately.
