Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups buttermilk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 1/4 cup packed brown sugar
Cream Cheese Glaze:
- 4 ounces cream cheese, softened
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
Cinnamon Sugar Sprinkle:
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Instructions:
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
In a small bowl, mix together the ground cinnamon and brown sugar.
Heat a griddle or non-stick skillet over medium heat and grease lightly.
Pour 1/4 cup portions of batter onto the griddle and spread slightly with the back of a spoon.
Sprinkle each pancake with a generous amount of the cinnamon sugar mixture.
Cook the pancakes until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
For the cream cheese glaze, beat the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
Serve the pancakes warm with a drizzle of cream cheese glaze and a sprinkle of cinnamon sugar on top.
