Ingredients:
- 1 1/2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups buttermilk
- 1/4 cup milk
- 2 large eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup chopped peanut butter cups
- Chocolate sauce, for drizzling
Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped peanut butter cups.
- Heat a griddle or non-stick skillet over medium heat. Scoop 1/4 cup portions of batter onto the griddle and spread slightly with the back of a spoon.
- Cook the pancakes until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
- Serve the pancakes warm with a drizzle of chocolate sauce and additional chopped peanut butter cups on top.
