Ingredients:
- 4 Cubanelle peppers
- 1 lb Italian sausage, casings removed
- 1 cup cooked rice
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped fresh parsley
- 1 cup tangy tomato sauce
- 4 slices Provolone cheese
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C). Cut the tops off the Cubanelle peppers and remove the seeds and membranes.
- In a skillet over medium heat, cook the Italian sausage until browned and cooked through. Drain excess fat.
- In a mixing bowl, combine the cooked sausage, cooked rice, grated Parmesan cheese, chopped parsley, salt, and pepper. Stir well to combine.
- Stuff each Cubanelle pepper with the sausage mixture and place them in a baking dish.
- Pour the tangy tomato sauce over the stuffed peppers.
- Bake in the preheated oven for 30 minutes.
- Remove the baking dish from the oven and place a slice of Provolone cheese on top of each stuffed pepper.
- Return the baking dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve the Cubanelle Sausage-Stuffed Peppers with Tangy Tomato Sauce and Provolone Cheese hot and enjoy!
