Ingredients:
- 1 pound pork belly, sliced into bite-sized pieces
- 2 ripe plantains (saging na saba), peeled and sliced
- 1 onion, sliced
- 2 tomatoes, quartered
- 1 radish, peeled and sliced
- 1 eggplant, sliced
- 1 bunch kangkong (water spinach) or spinach, trimmed
- 2 tablespoons sinigang sa sampalok mix (tamarind soup base)
- 8 cups water
- Salt, to taste
- Patis (fish sauce), to taste
- Fresh cilantro, for garnish
Instructions:
- In a large pot, bring the water to a boil.
- Add the onions, tomatoes, and radish to the pot and simmer for about 10 minutes.
- Stir in the sinigang sa sampalok mix and simmer for another 5 minutes.
