Steamed Lime Chili Snapper with Thai Herb Salad

Ingredients:
- 4 snapper fillets
- 2 limes, sliced
- 2 red chilies, sliced
- 2 cloves garlic, minced
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- For the Thai herb salad:
- Mixed salad greens
- Fresh cilantro leaves
- Fresh mint leaves
- Fresh basil leaves
- 1 shallot, thinly sliced
- 1 cucumber, thinly sliced
- 1 red chili, thinly sliced
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
Instructions:
- Prepare the snapper fillets by rinsing them under cold water and patting them dry with a paper towel.
- In a small bowl, combine the minced garlic, fish sauce, soy sauce, brown sugar, and vegetable oil. Stir well to make a marinade.
- Place the snapper fillets in a shallow dish and pour the marinade over them, making sure to coat all sides. Allow the fish to marinate for 10 minutes.
- While the fish is marinating, prepare the steamer. Fill a steamer pot or a large saucepan with water and bring it to a boil.
- Once the water is boiling, place the snapper fillets on a steamer tray or a heatproof plate. Top each fillet with a few slices of lime and red chili.
- Carefully place the steamer tray or plate into the pot, cover it with a lid, and steam the fish for about 10-12 minutes, or until the flesh is opaque and easily flakes with a fork.
- While the fish is steaming, prepare the Thai herb salad. In a mixing bowl, combine the mixed salad greens, cilantro leaves, mint leaves, basil leaves, thinly sliced shallot, cucumber, and red chili.
- In a separate small bowl, whisk together the fish sauce, lime juice, and brown sugar to make the dressing for the salad.
- Drizzle the dressing over the salad and toss gently to coat the ingredients.
- Once the snapper fillets are steamed, remove them from the steamer and transfer them to serving plates.
- Serve the steamed snapper fillets alongside the Thai herb salad. Garnish with additional lime slices and fresh herbs, if desired. Enjoy!
