- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- Salt, to taste
- Fresh cilantro, chopped (for garnish)
- Red chili flakes (optional, for garnish)
Instructions:
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, grated ginger, and bruised lemongrass. Sauté for 2-3 minutes until the onions become translucent and fragrant.
- Stir in the Thai red curry paste and cook for an additional minute to release its flavors.
- Add the cubed butternut squash to the pot and toss it with the curry paste mixture to coat.
