Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 200g beef jerky, soaked and shredded
- 200g smoked sausage, sliced
- 1 cup rice
- 2 cups beef broth
- 1 bay leaf
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions:
- Heat olive oil in a large pan over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the shredded beef jerky and sliced smoked sausage to the pan. Cook for a few minutes until the meat is slightly browned.
- Add the rice to the pan and stir well to combine with the meat and onion mixture.
- Pour in the beef broth and add the bay leaf. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for about 20-25 minutes or until the rice is cooked and tender.
- Remove the bay leaf from the pan. Fluff the rice with a fork.
- Garnish with chopped parsley before serving.
