Ingredients:
- 4 crusty baguettes
- 1 pound boneless, skinless chicken breasts
- 3 tablespoons lemongrass, finely chopped
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1 cup pickled carrots and daikon radish
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 1/2 cup cucumber, thinly sliced
- Sriracha mayo, for spreading
Instructions:
- In a bowl, combine the lemongrass, fish sauce, soy sauce, honey, minced garlic, and vegetable oil to make the marinade.
- Place the chicken breasts in the marinade and let them marinate for at least 30 minutes, or overnight for more flavor.
- Preheat your grill to medium-high heat. Grill the chicken breasts for about 6-8 minutes per side, or until cooked through. Remove from the grill and let them rest for a few minutes before slicing.
- Slice the baguettes lengthwise, leaving one side intact. Spread the Sriracha mayo on the inside of the baguettes.
- Layer the sliced grilled chicken, pickled carrots and daikon radish, cucumber slices, fresh cilantro leaves, and fresh mint leaves inside the baguettes.
- Serve the Vietnamese Banh Mi sandwiches immediately and enjoy!
Note: You can customize your Banh Mi by adding other ingredients like sliced jalapenos, sliced avocado, or different types of sauces.
