Ingredients:
- 2 sheets of puff pastry, thawed according to package instructions
- 10 ounces frozen spinach, thawed and squeezed dry
- 4 ounces feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- 2 green onions, thinly sliced
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten (for egg wash)
Instructions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine the thawed and squeezed dry spinach, crumbled feta cheese, grated Parmesan cheese, green onions, fresh dill, fresh parsley, olive oil, minced garlic, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
On a lightly floured surface, unfold one sheet of puff pastry. Roll it out slightly to smooth any creases and extend it just a bit.
