Ingredients:
- 3 racks of beef ribs

- 1 tablespoon kosher salt

- 1 tablespoon black pepper
- 1 teaspoon cayenne pepper
- For the glaze:
- 1 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup honey
- 2 tablespoons Worcestershire sauce
- 2 tablespoons soy sauce
- 2 tablespoons smoky habanero hot sauce
- For the spicy pickled onions:
- 1 red onion, thinly sliced
- 1/2 cup apple cider vinegar
- 1/4 cup water
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes
Instructions:
- Preheat your smoker to 225°F (107°C).
- In a small bowl, combine all the rub ingredients.
- Rub the mixture all over the beef ribs, covering them thoroughly.
