Ingredients:
- 1 baguette, sliced
- 1 can artichoke hearts, drained and chopped
- 1 can white beans, drained and rinsed
- Zest of 1 lemon
- Fresh herbs (such as parsley and basil), chopped
- Olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Arrange the baguette slices on a baking sheet and drizzle with olive oil. Toast in the oven for about 5-7 minutes or until crispy.
- In a bowl, combine the chopped artichoke hearts, white beans, lemon zest, fresh herbs, olive oil, salt, and pepper. Mix well.
- Spoon the artichoke and bean mixture onto the toasted baguette slices.
- Return the crostini to the oven and bake for another 3-5 minutes.
- Remove from the oven and let cool slightly before serving.
