Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons lime juice
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced cucumber
- 1/4 cup thinly sliced red onion
- Spicy Serrano Dressing:
- 2 serrano peppers, seeded and minced
- 3 tablespoons lime juice
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 2 tablespoons olive oil
Instructions:
- Preheat your grill to medium-high heat.
- In a bowl, combine the lime juice, grated ginger, minced garlic, salt, and pepper. Add the shrimp to the bowl and toss to coat evenly.
- Thread the marinated shrimp onto skewers. Grill the shrimp for about 2-3 minutes per side, until cooked through and slightly charred. Remove from the grill and set aside.
- In a large bowl, combine the mixed salad greens, cherry tomatoes, sliced cucumber, and red onion.
- To prepare the Spicy Serrano Dressing, in a small bowl, whisk together the minced serrano peppers, lime juice, rice vinegar, soy sauce, honey, and olive oil until well combined.
- Drizzle the Spicy Serrano Dressing over the salad and toss to coat evenly.
- Divide the salad among plates and top with the grilled shrimp.
- Serve the Lime Ginger Grilled Shrimp Salad immediately and enjoy!
Note: You can garnish the salad with additional lime wedges and sprinkle some sesame seeds for added flavor and presentation.
