These smoky chipotle bacon-wrapped dates are the perfect combination of sweet, smoky, and spicy flavors. The creamy goat cheese filling adds a delicious tanginess.
Ingredients:
- 12 Medjool dates, pitted
- 6 slices bacon, cut in half
- 2 ounces creamy goat cheese
- 1 chipotle pepper in adobo sauce, minced
- 1 tablespoon honey
- Fresh cilantro leaves, for garnish
Instructions:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, mix together the creamy goat cheese, minced chipotle pepper, and honey until well combined.
- Make a lengthwise slit in each date and remove the pit.
- Fill each date with about 1/2 teaspoon of the goat cheese mixture.
- Wrap each stuffed date with half a slice of bacon and secure with a toothpick.
